Fresh-Frozen Mantis Shrimp

Mantis shrimp, split open to show a full band of orange roe. The segmented shells are intact and the meat inside is firm and sweet.

Prized for that rich, custard-like roe, mantis shrimp are best simply steamed or boiled, then served with a dipping sauce. Split shells make them quick to open at the table.
